Flashing an (appropriate) sbf, will bring you to stock Recovery, remove the pudding (which will remove the words unlocked from the bootloader, although a fuse was permanately switched saying you have unlocked the bootloader), and un root you. The Fruitcakes keep CWM Recovery, and the unlocked bootloader (with the pudding file installed).and I forget if they are pre-rooted. Just to be safe, eat a fruitcake no matter what you want to do. I'm also of the understanding that you can go from Gingerbread back to Froyo (but why would you want to?!) if you use a fruitcake instead of an SBF, because the fruitcakes are CWM-flashable files that lack the actual bootloader. If you were on Gingerbread when you unlocked the bootloader, don't SBF anything less than Gingerbread unless you're really keen on having a $600 brick. Flashing the 2.3.4 SBF will only overwrite the system files and I recommend wiping data/factory reset when coming back from a custom ROM.That was my understanding as well.
